Ingredients
- 800 g zucchini
- 1 1/2 cups fresh mint leaves 25g
- 1 1/2 cups fresh parsley leaves 25g
- 150 g avocado flesh
- 40 g extra virgin olive oil
- 40 g fresh lime juice or lemon
- 1 tsp Himalayan salt
- 80 g roasted red capsicum cut into thin strips
- 60 g soft goats cheese or soft feta
- for the prawns
- 30 g extra virgin olive oil
- 1/4 tsp Himalayan salt
- 1/2 tsp smoked paprika
- 400 g raw peeled prawns

Instructions
- Turn your zucchini into zoodles. Set aside in serving bowl
- Wash and dry herbs and reserve a few for garnish
- Chop mint and parsley (reserving some for the garnish), add avocado, olive oil, lime juice and salt, and mash and mix until smooth
- Mix into the zoodles and capsicum
- Season prawns with the paprika and salt and pan fry or BBQ until done
- Serve the zoodles topped with the prawns, capsicum, cheese, and garnish herbs
Thermomix instructions
- Turn your zucchini into zoodles. Set aside in serving bowl
- Wash and dry herbs and reserve a few for garnish
- Into the mixer place the mint and parsley (except the garnish), chop 10 seconds / speed 7 / mc on
- Add avocado, olive oil, lime juice and salt, blend 10 seconds / speed 3 / mc on, scrape down and repeat
- Remove all. Spin remaining avocado off the blades by spinning 2 seconds / speed 9 / mc on, scrape out again. Mix into the zoodles and capsicum
- Without washing the mixer, place the oil, salt and paprika in and heat 2 minutes / varoma temp / speed 1 / mc off
- Place prawns onto paper towel to ensure they are dry
- Add prawns to the mixer, cook 5 minutes / varoma temp / speed soft / mc off, checking the prawns are moving around each other and cooking, if not, assist with spatula or press reverse every now and then and they will move
- Check the prawns are cooked (times may vary depending on the size), remove the prawns and discard the juice and oil
- Serve the zoodles topped with the prawns, capsicum, cheese, and garnish herbs
